Microgreens are tender young versions of plants harvested after the "sprout" stage but before the "baby" leaf stage. The stems and leaves are delicious and packed full of nutrition. Microgreens are also called vegetable confetti because of their many colorful small shapes and sizes. Microgreens pack a real nutrition punch. They are a rich source of vitamins and minerals. Rich in vitamins C, E, and beta-carotenes and an excellent source of phosphorus, potassium, magnesium, and iron.
