microgreens salad with lime vinaigrette
This is a crunch, fresh microgreen salad offset with the bite of the radish and a refreshingly delicious vinaigrette.
ingredients
- Microgreens Salad Mix (order here)
- 6 radishes sliced
- 2 Tbsp lime juice
- 1/8 tsp dry mustard powder
- 1/4 tsp salt
- 4 Tbsp olive oil
- coarse sea salt to taste
- ground pepper to taste
directions
- Place the microgreens and radishes into a serving bowl and put them in the refrigerator until ready to serve.
- To make the vinaigrette, whisk together the remaining ingredients, cover and refrigerate until ready to serve.
- When ready to serve, dress the salad lightly with the dressing, sprinkle with sea salt and fresh ground pepper.
Options
I really love a extra virgin olive oil (EVOO) for such vinaigrettes. The EVOO will have a bolder taste. If you prefer a milder taste then go with a light olive oil variety. Don't skimp here. A good olive oil adds great taste and olive oil is a source of good fat that you should be adding to your diet.
