microgreens salad with lime vinaigrette

This is a crunch, fresh microgreen salad offset with the bite of the radish and a refreshingly delicious vinaigrette.

ingredients

  • Microgreens Salad Mix (order here)
  • 6 radishes sliced
  • 2 Tbsp lime juice
  • 1/8 tsp dry mustard powder
  • 1/4 tsp salt
  • 4 Tbsp olive oil
  • coarse sea salt to taste
  • ground pepper to taste

directions

  1. Place the microgreens and radishes into a serving bowl and put them in the refrigerator until ready to serve.
  2. To make the vinaigrette, whisk together the remaining ingredients, cover and refrigerate until ready to serve.
  3. When ready to serve, dress the salad lightly with the dressing, sprinkle with sea salt and fresh ground pepper.

Options

I really love a extra virgin olive oil (EVOO) for such vinaigrettes. The EVOO will have a bolder taste. If you prefer a milder taste then go with a light olive oil variety. Don't skimp here. A good olive oil adds great taste and olive oil is a source of good fat that you should be adding to your diet.

Swap the lime juice for your favorite citrus flavors to create your custom vinaigrette.
