Scientific Name: Lentinula edodes (formerly Lentinus edodes)

Other common names include: "oakwood mushroom", "golden oak mushroom", "black mushroom", "black forest mushroom", or "sawtooth oak mushroom"

In the wild Shiitake grow on the decaying wood of deciduous trees in warm and moist climates in Southeast Asia. They are often found on chestnut, oak, maple, beech, sweetgum, ironwood, and mulberry trees.

In general, mushrooms fruit in a moderately warm and humid environment with plenty of fresh air. Think a late summer day after a shower or a warm, foggy, fall day.

Shiitake will start pinning  when the temperature is below 72 Fahrenheit or 22 C. (Pinning is beginning the fruiting from a mycelium to what we typically think of as a mushroom). We also call the 'mushroom' the fruiting body.

Keep the fruiting body exposed to humidity over 80% with temperatures below 72 F until the pinning starts.

Fresh air exchange to keep the mushroom  supplied with fresh oxygen and to remove the carbon dioxide produced by the mushroom.

A 2015 study indicated that consumption of shiitake can result in improved immunity (study here).
A 100-gram serving of raw shiitake mushrooms provides 34 calories - 90% water, 7% carbohydrates, 2% protein and less than 1% fat.

All features of the grow chamber are controlled by editing a simple text file. The controller looks like an external USB drive. Simply plug a USB cable from your PC into the controller, edit the settings file to setup: desired temperature, humidity, and lighting control. Save the settings text file and your grow chamber will follow your commands.
