In the wild Shiitake grow on the decaying wood of deciduous trees in warm and moist climates in Southeast Asia. They are often found on chestnut, oak, maple, beech, sweetgum, ironwood, and mulberry trees.

Shiitake will start pinning when the temperature is below 72 Fahrenheit or 22 C. (Pinning is beginning the fruiting from a mycelium to what we typically think of as a mushroom). We also call the 'mushroom' the fruiting body.
Keep the fruiting body exposed to humidity over 80% with temperatures below 72 F until the pinning starts.
